The Bikini Cocktail

Makes enough for 10 servings

For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Combine every components into a saucepan, bring to a simmer, mixing to dissolve. Next, turn off the stove and leave to cool completely. Pour into a sterilised bottle, close it and refrigerate it chilled, it can be stored for about four weeks.

To make Batch Mix: Mix all the spirits and syrup into a big jug, let it rest for one hour, then pass it through preferably using cheesecloth, so it's perfectly clear.

To serve: Pour 85ml of the premix into your stirring glass containing ice, and agitate gently for one minute until cold. Pour into a chilled martini glass or a similar vessel, decorate with a few cranberries and finish using a brief mist of mandarin oil over the top.
